Microwave strawberry jam Any berry can be substituted for strawberries, cooking times will vary slightly depending on type used.

INGREDIENTS

500g (2 punnets) strawberries
60ml (¼ cup) lemon juice
440g (2 cups) sugar

METHOD

Wash and hull strawberries, place in large bowl with lemon juice, cook in microwave on HIGH 4 minutes or until soft. Stir in sugar, cook on HIGH 20 minutes or until jam jells when tested on cold saucer; stir occasionally during cooking. Stand 5 minutes before pouring into hot sterilised jars, seal when cold.

Makes about 2 cups.
