Coconut cherry slice

This slice will keep in an airtight container in refrigerator for up to a week.
INGREDIENTS

1 cup self-raising flour
¼ cup castor sugar
¼ cup coconut
125g butter, melted
½ cup plum jam
Topping
125g glace cherries
1 cup coconut
¼ cup sugar
1 tablespoon cornflour
1 egg, lightly beaten

METHOD

Sift flour into bowl, add sugar and coconut, mix in butter. Press mixture evenly into lamington tin (base measures 16cm x 26cm), bake at 180°C for 15 minutes or until light golden brown, cool in tin. Brush base with plum jam, sprinkle with Topping. Bake at 180°C for 20 minutes, cool in tin before cutting.

Topping: Chop cherries finely in processor. Combine in bowl with coconut, sugar and cornflour, mix in egg.

Note: This recipe is not suitable to freeze or microwave.
