Cheesy vegetable lasagne
INGREDIENTS

1 tablespoon oil
2 medium onions, chapped
2 cloves garlic, crushed
2 medium red capsicums, chopped
3 small zucchini, chopped
425g can tomatoes
160ml (2/3 cup) water
2 medium eggplants
coarse cooking salt
60ml (¼ cup) water
12 sheets instant lasagne pasta
500g (2½ cups) ricotta cheese
½ cup shredded fresh basil
125g (1 cup) grated tasty cheese
Cheese sauce
50g butter
35g (¼ cup) plain flour
625ml (2½ cups) milk
25g (1/3 cup) grated parmesan cheese

METHOD

Heat oil in pan, add onions, garlic, capsicums and zucchini, cook, stirring, until onions are soft. Add undrained crushed tomatoes and water, simmer, uncovered, until vegetables are just tender and liquid is thickened slightly.

Cut eggplants into 1cm slices, sprinkle with salt, stand 20 minutes. Rinse eggplants under cold water, drain on absorbent paper. Place slices on greased oven tray, brush with oil, grill on both sides until lightly browned.

Grease ovenproof dish (2.5 litre/10 cup capacity). Spread a third of the tomato mixture over base of prepared dish, top with 4 pasta sheets. Spread pasta with half the ricotta, top with half the eggplant and half the remaining tomato mixture, sprinkle with half the basil. Top with another 4 pasta sheets, spread with half the cheese sauce. Top with remaining ricotta, eggplant, tomato mixture, basil and pasta sheets. Spread with remaining cheese sauce, sprinkle with tasty cheese. Bake at 180°C about 45 minutes or until pasta is tender and cheese is well browned.

Cheese sauce: Melt butter in pan, stir in flour, stir over heat until bubbling. Remove pan from heat, gradually stir in milk, stir over heat until sauce boils and thickens. Remove pan from heat, stir in cheese.

Serves 8

Recipe can be made a day ahead.

Storage: Covered in refrigerator.

Freeze: Suitable.
