Passionfruit Shortbread Biscuits - Cindy Luken

This recipe makes 30 biscuits.

180g butter, softened
100g pure icing sugar
100g cornflour, sifted
180g self raising flour
3 passionfruit, pulp only
1 teaspoon lemon zest, fine
50g butter
1 cup icing sugar
2 passionfruit, pulp only

Preheat oven to 220°C.

Cream butter, zest and sugar. Mix in passionfruit pulp, cornflour and flour. Chill for 20 minutes.

Line baking trays with glad bake. Pipe into rounds or fingers etc. Bake until golden brown, approx 5 to 8 minutes.

Icing: Melt butter, pour into bowl. Add passionfruit pulp and stir in icing sugar.

Beat for 1-2 minutes over hot water until icing is really shiny. Dip each biscuit into icing or drizzle over biscuits. Or dust with icing sugar.
