Orange and bay leaf rice pudding

Orange and bay leaf rice pudding
INGREDIENTS

2 ½ cups milk
½ cup sugar
Pinch salt
2 bay leaves
1 vanilla bean, split and seeds removed
Pinch of nutmeg
120g calrose rice
1 ½ cups cream
150g flaked almonds
cognac to taste
Serve with orange fillets and candied orange zest

METHOD

Bring milk, sugar, salt, bay leaf, vanilla bean and nutmeg to the boil, add rice and stir to combine. Reduce heat to low, and cook rice for approximately 10 minutes or until cooked, stirring at regular intervals.

Allow to cool to room temperature. Add cream, cognac and almonds.

To serve, spoon generous portions onto the centre of each plate, and top with fresh orange segments and candied zest.

Serve immediately.
