Sticky chicken drummettes

Sticky chicken drummettes
INGREDIENTS

2 garlic cloves, crushed
1/3 cup hoisin sauce
2 tablespoons plum sauce
2 tablespoons lemon juice
2 teaspoons grated ginger
1kg chicken drummettes
2 tablespoons peanut oil
1 clove garlic, crushed
2 teaspoons finely grated ginger
½ red capsicum, finely chopped
1 cup cooked rice
4 green onions, finely sliced
1 egg, lightly beaten
2 tablespoons oyster sauce

METHOD

Preheat oven 220°C (fan forced 200°C).

Combine sauce ingredients in a large bowl and mix well. Add drummettes and toss to coat evenly. Marinate 1 hour, if time permits.

Lay chicken onto a baking tray in a single layer and bake 10 minutes. Turn over and bake a further 10-15 minutes or until crispy and cooked through.

Heat oil in wok or large frying pan and cook garlic, ginger and capsicum until just tender. Add rice and stir-fry 2 minutes. Push rice to one side of the wok and crack egg into the centre of the wok. Allow to fry 1 minute or until half cooked. Using the charn, chop the egg into large pieces and stir fry though the rice. Add green onions and oyster sauce and stir-fry to combine.

Serve drummettes with fried rice and steamed Asian greens.
